So since we knew that I wouldn’t be here to celebrate Oreo’s birthday on Tuesday, we decided to celebrate it over the weekend! So first of all, we took him to Pet Smart so he could pick out a TOY!
He picked out this red football (made by Kong so it will hold together!!) at Pet Smart and has loved playing with it ever since!
And of course I made him CAKE!
Oreo’s Sweet Potato & Pumpkin Birthday Cake!
2 1/4 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/2 cup canola oil
1 (15 oz) can pumpkin puree
1 cup sweet potato, baked and mashed
8 oz plain greek yogurt
1. Generously grease two bread pans and 12 standard muffin tins; set aside. Combine flour, baking powder, baking soda, cinnamon and nutmeg; set aside. In a mixing bowl, beat oil, eggs, pumpkin, and sweet potato. Add flour mixture and mix until smooth.
2. Pour 1″ batter into the greased bread pans then divide the rest among the muffin tins. Bake at 325° for 45 minutes. Test for doneness with knife or toothpick before removing. When done, Let cool for a few minutes before removing from pans. Cool completely on wire racks.
3. Take cake rectangles from bread pans and slice in half so you have 4 squares. Layer Greek yogurt between squares and then use it to “ice” the rest of the cake. Top with blueberries. Serve to the pups!
Oreo loved it! And I have to tell you, Christopher and I tried it too because it smelled SO good! Our house smelled like Thanksgiving (sweet potato, pumpkin and cinnamon, haha!) and it was wonderful. I think if I added some applesauce or banana to the mixture then it would add the perfect amount of sweetness and really yummy. He had a great birthday and I was glad that we were able to celebrate it.
