Christopher and I got “iced in” earlier this week. Not “snowed in” since there was no snow, we just both got off work early due to the ice and then decided to cancel our plans that evening just in case the roads got really bad. It was a totally unexpected, but wonderful night in.
So since it was so cold out, you’d think that we would be sipping on hot tea or cocoa that night, but oh no! Not us, ha! We decided instead to make banana soft serve inspired by Chocolate Covered Katie and oh my gracious, it was delicious!
Ingredients:
3 medium bananas (the riper the better)
1 tsp pure vanilla extract
dash salt
3 tbsp cocoa powder
3 tbsp creamy peanut butter
2 tbsp almond milk
Directions:
1. Ahead of time: peel and slice the over-ripe bananas into chunks. Freeze in a Ziploc bag.
2. Combine all ingredients in a food processor or blender. If you want the look of ice cream, use an ice cream scoop to serve! (If you scoop it all into a container and freeze about 10-15 minutes, the texture will also become a bit firmer like ice cream, as opposed to soft serve.)

There’s seriously nothing better than (1) being snowed/iced in and (2) peanut butter. That looks SO good.

Mmm…this is one of my favorite “quick, I need something sweet right now” desserts! I’ve never tried adding cocoa and peanut butter, though! YUM. I also enjoy adding protein powder for a post-workout treat.
