Christopher and I are involved with a lot of volunteer work and for the summer our Thursday evenings (from 5:30-10:30) are taken up with a basketball league at our church. Christopher and another guy at our church were the brains behind the first league at our church last year and it went really well. So this year they decided to do it again Anyway, Christopher is not only volunteering, he’s also playing on one of the teams. And since I’m his wife I have total bragging rights. My husband was the lead scorer in the game they won last week with a total of 38 points (1/2 his team’s total points) and that isn’t including his points from the triple over time. And did I mention it was a buzzer beater shot launched from half court that won the game? Not by Christopher, but still – pretty darn cool. *grins*
Ever since my laptop fried, I’ve realized how much I rely on it for a million small things. Like cooking. I have all my recipes on the blog and/or to-make-list which is fine when I can unplug my laptop and set it on the kitchen counter so I can keep up with the recipe. Not so much anymore. So I dug out my mom’s cookbook and started flipping through it for something delicious sounding. I’m glad I did. Two photos to show you why:
Momma’s S’ghetti Sauce: Completely and totally delicious. Especially since I had all fresh herbs so the aroma was unbelievable.
Momma’s S’ghetti Sauce
1 lb ground beef
1 onion, chopped
3 cloves garlic, minced
1 large can tomato puree
2 bay leaves
1 tsp sugar
1 tsp basil
1/2 tsp marjoram
1 tsp salt
1/4 tsp cayenne pepper
black pepper to taste
1 tsp oregano
1/2 tsp rosemary
1. Brown meat and drain off grease. Put back in skillet and stir in onion and garlic until softened.
2. Combine all ingredients in crock pot and cook on low for 4 hours. Serve over pasta.

Two Step Chicken Casserole: I totally don’t remember this growing up so I think it’s something she started making after I moved out, but my goodness, it was delicious and so simple!
Two Step Chicken Casserole
1 1/2 cups picante sauce
3 tbsp packed light brown sugar (we used Splenda Brown Sugar)
1 tbsp dijon mustard
4 boneless, skinless chicken breast halves
2 cups brown rice, cooked
1. Preheat oven to 400. Mix sauce, brown sugar, mustard.
2. Place chicken in 2 qt shallow baking dish and pour sauce mixture over chicken and bake 40 minutes or until chicken is no longer pink. Serve over rice.

In completely random news… I think I’ve been listening to too much Glee Cast music. I woke up this morning with their version of “Somewhere Over the Rainbow” playing in my head. I may or may not have been singing in my sleep. I may or may not have been known to do that pretty frequently in the past. I may or may not need to stop saying “may or may not”…
Anyone else do unusual things in their sleep? I not only sing in my sleep, but I talk nearly every night and occasionally even walk in my sleep (though not recently). I also sleep with my eyes half open sometimes which I hear is kind of creepy looking. Hmm… I think I’m done sharing weird facts about myself for the day, haha!
